Description:
El Rescatado Organic Red, aging 3 months in oak

Viticulture:
This wine has been produced 100% with the unique and autochthonous Prieto Picudo ECO-grapes which grows in our Leyenda del Páramo Organic-plot.


Soil:
Deep, acid and por soil. With a clay texture, it is mostly made up of gravel and pebbles.

Production:

Pre-maceration in cold (8º) for 8h in stainless steel vats.

Alcoholic fermentation: 10-12 days at 28º.

Malo-lactic fermentation in stainless steel vats.

3 months in fouth and fifth years barrels. 50% French oak (Allier), 50% American oak (Missouri).

Fining agent: vegetarian gelatin and bentonite.

Cold stabilization: 15 days at -5ºC.

Amicrobic filtering.
